Chestnut & Mushroom Soup


  • 1 kg chestnuts, boiled & peeled
  • 1 kg mushroomss, sliced
  • 2 onions, diced
  • 6 celery sticks (use green leaves too)
  • 2 L good stock of choice
  • Dash of sherry (to taste/optional)
  • Thyme, parsley, seasoning


1. Sauté onions in some olive oil, add sliced celery & mushrooms, allow to soften for a few minutes.

2. Add peeled chestnuts, sauté for few more minutes, then add herbs and stock and simmer for 45 mins.

3. Process in food processor until smooth or desired consistency. Add a dash of sherry & season to taste. Adjust thickness with more stock or water if required.
